Our appliances are Ubuntu underneath the hood. We just give you a better default to start with. You can then reconfigure an appliance to your heart's content just like you would with a normal Ubuntu system.
OTOH, that doesn't necessarily mean it would be a good idea to start with the LAMP appliance if you want Ruby on Rails. You might be better off starting with the Rails appliance and reconfiguring that.
