I don't see ZIMBRA as a choice in the list of apps that can be deployed to AWS through the hub. Is this an oversight, or is it purposely not being supported?

Zimbra is currently only available in the "legacy versions" (you'll notice the link on the Hub launch page top right).
TKL 11.x is only available in 32bit builds at the moment, and the newer Zimbra installations are only 64bit, hence the lack of support. Once we support 64bit, we'll release a new Zimbra appliance.
