Can somebody confirm if I can run tkl openvpn as a vpnserver to route web traffic from my ipad and iphone via my uk server before I spend time setting up. My windows server which I have been using is giving me grief after tlates updates.

Unfortunately, I know nothing about iPad/iPhone so can't comment on that side of things. But assuming that there is a VPN app compatible with OpenVPN then you should be good.

Although, when you say via your UK server, where exactly did you plan to run TurnKey? Normally you would run TurnKey OpenVPN as the server.
