Japan has a long history of incorporating various foods into their culture. This includes food that was once thought of as being from Asia but is actually of European descent. Sushi is one of these dishes that is often associated with Japan and is considered to have originated there. Sushi, which means "fish roll", is a traditional Japanese dish made of raw fish such as salmon, tuna, or swordfish, and wrapped in nori (a thin sheet of seaweed similar to sushi rice). The traditional sushi is often associated with a particular country or culture, though the various versions of sushi are actually traced back to many different countries and cultures such as Japanese, Korean, Chinese, and Thai. Most people associate the dish with Japan, though the history of this type of dish goes back to ancient China and Korea. Many years ago, the Chinese used rice mixed with spices, while the Koreans used sesame oil. This version of sushi in Japan came to be known as takoyaki or raw fish. The earliest recorded use of sushi in Japan is believed to have been during the 14th century when Buddhist monks in Okinawa cooked this raw food for the royalty and commoners on their special rice fields. The reason being was that during this time, rice cultivation was first developed in Japan. It was during the Edo period that sushi first became popular among the general public and began to be eaten in places such as tea houses. Today, sushi making is very much a part of Japanese culture and cuisine. The tradition continues today, as it is considered to be one of the most popular forms of food. The Japanese have a wide variety of different varieties of sushi prepared in restaurants and at home. There are many different kinds of traditional sushi preparation. The basic ingredients used in sushi making are rice, nori (seaweed), fish and seaweed. These are combined with a variety of spices and vegetables and toppings. The raw fish is usually marinated in sake, which is a Japanese beer that is then mixed with the rice.
