It uses LVM. There is a quite dated, but still relevant blog post on how to increase the size.
If you're interested, read the whole thing. If you just want to increase your root volume, scroll down to the "Extending a Logical Volume". It sounds like you have already increased the size of the underlying vHDD, so go with "example #2" (in "Extending a Logical Volume").
